Scotland have defeated South Africa and Australia in the last two years but victory over the All Blacks has continued to elude them.
Andy Robinson's men kick off their EMC autumn Test series against the world champions at Murrayfield on November 11 and Ford revealed they had already started working on a plan to cause an upset.
The Edinburgh hooker, who launched Scotland's new saltire-based away kit on Wednesday, told BBC Scotland: "We go into every game believing that we can win.
"It's a great opportunity to play against the best team in the world and everyone will be raring to go.
"It will take an 80-minute performance out of the top drawer, but that's what we have been working on."
Scotland bounced back from their RBS 6 Nations whitewash with a clean sweep in their summer tour with victories over Australia, Fiji and Samoa.
Ford said: "We've been working on our consistency and repeating our good work.
"We've just got to make sure that happens against the All Blacks because it will take that to beat them."
